Pumpkin Oatmeal Cookies

Nothing says fall better than pumpkin. Everything sweet seems to have a pumpkin offering now, and why not...pumpkin is good. We certainly don't want to stop a good thing from going, so grab your apron and come on. Let's bake. 

Pumpkin Oatmeal Cookies

2 cups oat flour

1 1/3 cup rolled oats

1 teaspoon baking soda

3/4 teaspoon salt

1/2 teaspoon nutmug

1 2/3 cup sugar

2/3 cup oil

2 tablespoons molasses

1 cup pumpkin

1 teaspoon vanilla

1 teaspoon cinnamon


  • Pre-heat oven to 350 degrees.
  • Mix all ingredients together.
  • Spoon 2" scoops of dough onto greased or silicone padded cookie sheet.
  • Bake for 16 minutes. 
  • Allow cookies to cool.
  • Ice with cream cheese frosting.
