This dish is a snap to cook, but makes an impressive side dish. They’re also hearty enough that you can have a few, or eat one as the main course. Not only are they easy to make they are pretty tasty. What's not to love about anything sprinkled with parmesan?!

Baked Parmesan Tomatoes

INGREDIENTS

4 tomatoes, halved horizontally

1/4 cup freshly grated parmesan cheese

1 teaspoon chopped fresh oregano

1/4 teaspoon salt Freshly ground pepper, to taste

4 teaspoons extra-virgin olive oil

DIRECTIONS

  • Preheat the oven to 450°F.
  • Arrange the tomato halves in a single layer on a baking sheet, with the cut side (the middle/inside) facing up.
  • Top them with the parmesan, oregano, salt, and pepper, spreading the toppings equally among the tomato halves.
  • Drizzle with olive oil and bake for about 15 minutes, or until tender.
